In honor of National Rum Day, we are putting the Mai Tai cocktail on a throne. A pineapple throne. This rum-based drink just never lets us down, no matter which variation of the Mai Tai recipe we choose to use. This recipe is what I called the speed Mai Tai when I was full time behind the bar. It's quick, easy, uses basic ingredients, and is impossible to resist just having one.
Speedy Mai Tai 1.5 ounces white rum ½ ounce (or more) dark rum 1 ounce fresh orange juice 1 ounce fresh pineapple juice 1 ounce homemade sweet & sour ½ ounce fresh lime juice 1 tablespoon grenadine
Directions: Fill a glass with ice. Add all of the ingredients except the grenadine and the dark rum. Mix or stir the liquid with the ice, then add the grenadine and a dark rum floater. In this photo, the dark rum was already mixed in, otherwise the dark rum will "float" on the top. Enjoy!!
