Vanilla simple syrup. It mixes well with every darn spirit you've got and is a fantastic substitute for that plain ol' boring simple syrup that's called for in so many cocktail recipes. Budget about 10-minutes to cook up the syrup and another ten-minutes for an ice bath if you're planning on using the syrup right away. Otherwise pop it in the fridge and save it for a rainy day that calls for bourbon or rum or gin (or whatever!) with a touch of vanilla. Step One: Cut up one long vanilla bean or two short pieces and combine it with 1 cup organic sugar and ½ cup water.
Step Two: Simmer for about 10-minutes, stirring occasionally. Take care not to burn the sugar. You'll notice specks of the vanilla bean in the sugar, which will add extra flavor and texture to the syrup.
Step Three: Remove the mixture from the heat and strain into a sealable container. Allow to cool before using or refrigerate for later use. It will keep in your fridge for about 2 weeks.
