For your next weekend brunch, give your guests a fresh take on scrambled eggs. Bake a lovely little egg and cheese soufflé . It's fantastically easy and you can dress the soufflé up any way you please. We kept half the dish plain for those wanting only eggs and cheese, and made the other half a little fancier with some spinach and tomato. Step 2: Crack the eggs into a bowl. We used a majority of egg whites.

Step 3: Add a little cheese and milk or cream to the mix.

Step 6: Pour in the egg mixture and garnish with various goodies.
