Summer is here and it's time to roll out every summery, beachy, blue-sky, clear-ocean cocktail we can think of. We're really serious about this. For the next ten weeks, we're going to focus on cocktails with summertime words in the name because when else does an ocean breeze, summer sunset, or July passion cocktail taster better? By definition, a beachcomber is someone who combs through the sand looking for lost treasures. Growing up in San Diego, Jocelyn and I went to the beach a couple times a week about ten months of the year, alternating between PB, Coronado, La Jolla Shores, and Mission Beach. At some point in the day, we'd see some old guy or a group of women combing the sand with the latest metal detector model. They were never vagrants but comfortably dressed seniors enjoying a post-retirement hobby.
Every now and then the beachcomber would actually kneel down and dig out a clump of sand, sift through it carefully, and eye every shell, shriveled piece of pulp, and bleached out twig for a sign of something precious. But never once in all those years did we witness anyone throw their equipment aside, jump up and down in a euphoric state, and scream, "Gollllllllllllld!"
This is the beachcomber cocktail recipe, a delicious and mellow drink, and in our opinion, a treasure in every sip.
Beachcomber Cocktail Recipe 2.5 ounces rum 1.5 ounces pineapple juice ½ ounce triple sec ½ ounce maraschino liqueur ½ fresh lime juice
Directions: Fill a martini shaker with ice. Add the rum, pineapple juice, triple sec, maraschino liqueur, and fresh lime juice. Shake well and strain into a martini glass. Garnish with a lime and serve.
