On Sunday during our regular simple syrup batch making, we made five syrups for the week. One of them was a lemon plum simple syrup, which we've already used in quite a few cocktails (nevermind that it's only Tuesday). You'll need to remove the rind if you don't want a slightly bitter taste, otherwise, just add little more sugar to counter it. We kept the rinds on this time, added extra sugar, and cooked it for 20 extra minutes.
Directions Quarter a lemon and two plums and add them to a pan with 1 cup of sugar and 1 cup of water. Boil for about twenty minutes, then simmer for another twenty. Remove from the heat and allow the simple syrup to cool. Filter out the fruit and store the lemon plum simple syrup in your fridge for 7-10 days.
