Pomegranate Mojito Cocktail Recipe

Last night we served up a giant batch of Pomegranate Mojitos and at the end of the night the drink dispenser was completely drained. Nothing makes us happier. Here's the recipe for an individual serving and the batch recipe. Pomegranates look so beautiful as centerpieces during the fall and winter months, so why not put them to more use than just decoration? We cheated a bit by buying a pre-made pomegranate juice, but if you're feeling in the mood for some intense culinary work, fresh pomegranates taste even better.

Pomegranate Mojito

Pomegranate Mojito Cocktail Recipe (Single) 1.5 ounces rum 1 lime 2 mint sprigs 1 tablespoon sugar 3 ounces pomegranate juice

Pomegranate Mojito Cocktail Recipe (Batch) 1 bottle rum 6 ounces freshly squeezed lime juice ½ cup super fine baker's sugar 50 ounces ( about 1.5 liters) pomegranate juice 2 packages fresh mint leaves 1 package mint leaves for garnishes club soda* optional

Directions: Muddle the clean mint leaves in the rum until your arm hurts. The mint should begin to break apart and the rum should turn green. Strain the rum into a new pitcher to catch the mint bits and discard of the used mint (be sure to press the mint well to squeeze out all the rum.) Taste the rum to make sure it's minty enough! Add the sugar and stir until it dissolves. Add the pomegranate juice and the lime juice. Adjust the taste if necessary by adding more lime juice or sugar if desired. Don't add the club soda to the batch unless you're serving it as a punch. Garnish the punch, pitcher, or individual glasses with mint leaves and lime wheels.

Directions Muddle the mint sprigs in the rum (we like super minty mojitos so we muddle the mint until our wrist hurts). Strain the mint rum mixture into a new shaker or measuring pitcher and add the sugar. While it's beginning to dissolve, squeeze one lime in. Stir the mixture until the sugar completely dissolves, then pour into a glass with ice. Add the pomegranate  juice, garnish with a mint sprig and serve.
